As the vehicle raises and lowers the positions and orientation of the tires changes (camber changes, etc.). If you have the brake applied you've taken all the slop out of the drivetrain so the sounds you hear are either the tires moving on the ground or a wheel breaking free from the brake shoes to release pressure. I got that a lot on my Cayenne and Touareg and it is disconcerting the first time it happens.
To test if there's any sort of real binding happening simply come to a stop, place the vehicle in neutral and don't use the brakes. There shouldn't be any loud noises.
