The extra noise you will get by deleting the mufflers would not be a good kind of noise. Don't do it.
If you want extra noise your best bet would be to purchase either the Corsa or Borla V8 systems which bolt right up to V6 models. Won't sound as cool as a V8, but atleast it will be decent. Unfortunately they are expensive, but IMO do it right or don't do anything at all. A V6 with mufflers deleted is not s pleasant sound.

I have not made any modifications to my exhaust, however I had originally considered it. I think everyone's taste is different, however I have yet to hear a custom exhaust on any vehicle equipped with the 3.6 liter VVT that is to my liking. What I have found is that my engine sounds much better (in my opinion) after installing the MOPAR Short Ram intake. It's marketed as a cold air intake.
I didn't add it for power/performance, I added it purely for sound. I have a short video that I think accurately captures how my Jeep sounds with this intake. I would try to watch it using decent speakers/headphones to get a better idea of the sound. It's from an outside perspective.
