is there a way to change which mode, or any mode other than normal, that is the default during start up?

i am only on the road here, and i like sport mode just fine in all 'normal' driving conditions.

i would like to start in this mode for me every time vs. having to select it manually every time after start

No, there is no option for that. The JGC will always "start" in "Normal".

Dang. Wish there was something like this for the "eco" mode for Hemi's!

You can select entry/exit mode which will lower the vehicle 1.5 inches but it will raise back up when you crank it again. It makes getting in and out of the vehicle easier. Aero mode raises 1/2 inch so it's not like it makes a lot of difference. There are also DIY air link threads here. You could lower your links up to an inch through all settings.

Correct. The default is always "normal"...and it's been that way since MY11.

Once you get into the suspension settings (from the owners manual):

Air Suspension — If Equipped
After pressing the Suspension soft-key the following settings will be available.
• Auto Entry/Exit Suspension
When this feature is selected, the vehicle lowers the suspension for easy entry/exit. Touch the box next to your selection and a check-mark appears next to the feature showing the system has been activated or the check-mark is removed showing the system has been deactivated.

That feature is not available on MY11-13. Park mode selection is manual only by pushing the button and not exceeding about 15 mph or so. (I forget the exact speed limit for Park mode)

The entry/exit lowering mode is very cool and helpful. It also slams the Jeep when parked.

A pic of my Summit on last Disney trip,

From the manual:

Entry/Exit Mode (Lowers the vehicle approximately 1.6 inches (40 mm) – This position lowers the vehicle for easier passenger entry and exit as well as lowering the rear of the vehicle for easier loading and unloading of cargo. To enter Entry/Exit Mode, push the “DOWN” button once from (NRH) while the vehicle speed is below 25 mph (40 km/h). Once the vehicle speed goes below 15 mph (24 km/h) the vehicle height will begin to lower. If the vehicle speed remains between 15 mph (24 km/h) and 25 mph (40 km/h) for greater than 60 seconds, or the vehicle speed exceeds 25 mph (40 km/h) the Entry/Exit Mode change will be cancelled. To exitEntry/Exit Mode, press the “Up” button once while in Entry/Exit Mode or drive the vehicle over 15 mph (24 km/h).
NOTE: Automatic lowering of the vehicle into Entry/Exit Mode can be enabled through the Uconnect Touch-Screen Radio. If this feature is enabled, the vehicle will only lower if the gear selector is in PARK, the terrain switch is in AUTO, the transfer-case is in AUTO” and the vehicle level should be either in Normal or Aero Mode. The Vehicle will not automatically lower if the air suspension level is in Off Rd 2 or Off Rd 1. If the vehicle is equipped with Intrusion Theft Module (ITM), the lowering will be sup- pressed when the ignition is switched OFF and the door is open to prevent setting the alarm off.

I believe you can use a RAM1500 or 2500 BCM option to disable Automatic Aero mode.
In the RAM trucks there's a button to turn it off.

Youll need to have a look through the RAM BCM options. You can do this by running Alfa in demo mode. Try your luck but it could mess things up for you as well. You'll need to use an old version of Alfa as well - one that allows you to skip ECU verification.

Another thought is if the vehicle is in tow mode i believe aero is disabled.
