I got them and they look and ride great! I'll get some pics up.
-the distance between the front tires' inner wall and the suspension bolt is tight, barely enough space to get a finger between. Under what circumstances would that be an issue? Can that hit with a big bump, or do they move together?
-What PSI are you running, still 42? I got them at 55, highway felt great but some speed bumps I rode over at 5mph jarred a bit more than usual... I'll let some out and see how it improves. What about beach psi? Still 12-15?
-my speedometer, and presumably odometer, are off ~5%. Do I care enough to do anything? What could be done if yes?

If too many details here, just ignore and use only the info you need.

It's all about OD (O.D., outside diameter) and relative rates of tire spin.

The spare tire's width is not important in this case but its OD is important. Because of our 4x4 systems, a difference in tire spin rates results in power being momentarily redirected from the more spinning tire(s) to the less spinning tire(s) - the more spinning tire(s) are slipping, so, the Jeep system redirects power to the less spinning tire(s), the one(s) with grip. This is a good thing. We want this to happen.

Once all tires re-establish grip, they all spin at the same or similar rates and the 4WD system can rest - we are back to 2WD (RWD) and things are back to normal.

In our cases we have 32" OD tires and a spare with a 30.5" OD. (The 265/50-20 Goodyear Fortera's outside diameter is 30.5". When that spare is mounted there is a permanent difference in rates of spin and the 4WD system is always working, redirecting power away from the spare.

The solution is to get a spare with the same OD. If that spare is thin (narrow), it should fit in the spare tire well and the lid should close.

E7T is correct. If you upgrade to the 32" tires, they will make 632 revolutions every mile. However, the stock spare will revolve 660 times in that same mile (which is 28 more revolutions per mile). That may not sound like much until you break it down. For every 22 revolutions of the 3 good tires, the spare will turn 23 times (roughly). Assuming my math is correct, you're adding a full revolution to the spare mounted location every 183 feet. The QD/LSD is going to sense that as a slipping tire, and try to compensate.
That's not an issue if it's just to limp a few hundred feet to get off the road, to a safe place, but I wouldn't want to do it for any significant distance (several miles or at any appreciable speed).

FWIW, if you want to match the spare to the upgraded 275/55/20 tires, you can swap the spare for a 255/70/18. This gets you to the upgraded tire size, while keeping the width narrow enough to hopefully fit under the floor. That size I just gave you would be 10mm (0.39") wider than OEM spare, so it should fit though I haven't tested it. FWIW, I did test the spare from my Ram, which is a 33" tire and it fit in the hole. The only question will be if the extra 10mm prevents the floor from closing.

The suspension bolt is normally not an issue. The tire and the linkages move as a unit. It may be a problem for snow tire chains, for example. But I have done plenty of trails and such, no problems.

I run 42psi and air down to 20psi for the trails and for sand. You could try lower, maybe 15psi.

My speedometer is off because of the larger tires. I don't care enough to see how much it would cost to correct it. If it can be corrected.

Yes, they can be corrected. You can either buy a programmer/tuner and do it yourself, or you can ask your dealership to do it for you. These things are all digital now, so they can be flashed to show the correct speed, mpg, and distance by simply plugging into the OBD2 port and updating the tire size.

OEM Spare from a 2016 Wrangler Sahara Unlimited fits just fine. I just bought a set for my '14 Overland, and they fit great. Spare fits fine too. The floor closes, with no issues and the foam "tray" that holds the jack, funnel, etc also fits. The foam tray does sit slightly higher, and you have to apply a little (I'm talking very little) pressure on the floor to get it to latch shut with the tray in the Sahara spare. I'm assuming this is due to the offset difference between WK2, and JK rims (56mm vs 45mm). I'm going to shave a few mm off the tray so it fits like it does in the OEM spare (should only take about 10 mm off the bottom).

Anyway, the point is a 255/70/18 Bridgestone Dueler A/T will fit in the storage area, and allow the floor to close above it. This is confirmed, I just did it. I have attached a photo of the tire in the well, but didn't bother taking a shot of the floor closed, because that could be any shot of the floor closed (stock spare, empty, etc).

I'm running 275/55/20 KO2's with not rubbing. We did have to pin back the fender liner a little bit but just with two screws.

285/55/20 Mikey Thompson ATP3's. Needed to grind the edge of the upper ball joint threads (not the nut) just the threads. Plenty of room. Very slight contact to the felt in park mode at full lock but no issues otherwise. These WILL NOT fit with a spacer. Tires will contact front wheel well edges in turns. Looks MASSIVE in wheel wells. Will post pics later.

Just installed K02's with RRO leveling kit today. Rides great with no rubbing but I ordered !.5" spacers to make the stance wider.
