Different nav software- 430N is Garmin, 730N is Harmon
730N add voice control of nav and music (like the joke, yes, you can speak station names)
730N has some nav tweaks like dead reckoning for when the signal is unusable.
730N comes with an iPod cable in the hatch at the bottom of the center stack; 430N doesn't, but has a USB port in the center armrest (the 730N only has USB on the faceplate). That port can be used to control an iPod/iPhone on the 430N.
430N supports bluetooth streaming audio, 730N (RER) doesn't; supposedly the RHR revision will.
730N allows split screen nav map and audio, the 430N makes you pick what you see on the display.
There's probably more, but those are the biggest differences.
