Well, it's not unprecedented.
Depending upon when you did business with them, it may have been right after their annual financial review. While they would have gone over the books for quarterly taxes and such, a full audit of the finances might be the only way they caught it.
Having said that, if you signed the billing invoice that showed the amount you actually paid, they can't actually come after you for the rest. The sum on the invoice was the agreed payment you were responsible for.
That's between them and the insurance company. If they didn't get an OK from the insurance company first, that's on them. If the insurance company reneged later, that's what lawyers are for.
They're coming to you because they figure it's easier.
