The best protection is to put all 5 on. These 3 part numbers contain all 5 skid plates (part numbers 82211999, 82211994AB, 82211995)

The current plate on the transmission is plastic so if you can find a steel plate to cover that would be better also the current belly pan is plastic and there are after market belly pans that are being made that are steel.

so the five factory plates plus a aftermarket trans plate and belly pan would have you fairly well covered

Would plasti-dipping the bottom of the fuel tanks provide a decent amount of protection and save some weight?

I don't think it would and others have reported that the weight does not affect mpg.
