With the engine at operating temperature, its normal that you can't put your hand on the upper radiator hose. The coolant temperature is held at around 99 C, so almost boiling point. You should first repair the coolant temp sensor problem, because this temperature signal is used by the PCM as well for the calculation of several output signals, and will affect the fuel injection strategy.
Saying that it runs hot without any concrete value doesn't help a lot.
Does the engine shut off due to the high temperature?
