01 Wj rear cat delete general question

My jeep has been brought back from the dead cause someone didn't know how to properly take care of a vehicle. I believe my rear cat is starting to stop up and I want to replace it with a glass pack to go with the aftermarket exhaust system I had built. This is just a play vehicle for camping and fishing trips. The emission things need not apply due to living in a state where we don't have emission testing. Please let me know if I need a o2 delete or if I can just plug it to the heat shield and would I throw a C.E.L. (Check engine light) and any little hints to help with this resurrection. . I don't want to delete the front o2 just the rear behind the cat.

To help with questions about the ride:
2001 jeep Wj 2x4 4.0L Laredo
Spectre DIY cold air intake
Flowtech afterburner muffler
185 degree thermostat
Aftermarket transmission cooler
6,000k low beam HID headlights

Without the complete O2 system working you will most likely be burning more fuel, the engine may even run rough and the exhaust may smell very bad. Why would you not want the emissions system to be operational? I know when my O2 sensor in front went out, the Jeep would hardly run at all. Not sure about the rear one although I'm pretty sure they work together to help establish a fuel rate for a smoth running engine.

The rear O2 just checks the fume level out of the rear cat. Im just gonna replace it with a high flow cat.
