well... assuming the unibody is straight before you start... its not too bad..
you plan out the lines you're going to cut.
notch the unibody along those lines (without completely cutting through)
brace those notches with tubing (usually square stock)
weld it all up so its solid.
Cut the body off above the bracing.
boom structurally sound chop top.
After that its all cosmetic.
