Is there a setting somewhere that I can adjust so that I'll see some sort of visual cue when the V8 deactivates cylinders?

No, unfortunately not. That would be nice to have. Watching the instantaneous fuel mileage may give some indication as it should increase with a steady throttle and light engine load. The telltale slight vibration that most people notice under those same conditions also indicates MDS operation.
