I'd stay around the 3/4 difficultly level at worst, to be safe. I've never been, but I've been planning a trip and some of the trails I've considered are:
Long Canyon, Bull Canyon, Gemini Bridges, Four Arches Canyon, Eye of the Whale, Tower Arch, Taylor Canyon, etc.

See sites you've never seen before, or try to get stuck?
If you are coming from the east on I-70, near the old town of Cisco, take Hwy 128
down to Moab.
The lasalle loop road is "honda" capable, but unless it has been redone, from it there
are all sorts of little trails that will challenge you. A really good one is to the old Fowler mine [ask locals] near Miners Basin.
