I took an '11 V6 for a ride. It's got lots of power (has a similar feel to my '03, '05, '00 & '04 5.2L GC V8's). Unfortunately, I'm a little biased since all my vehicles have, or have had, V8's. I especially like the torque numbers for the Hemi for driving the Jeep under load (towing, hill climbing, etc.) and accelerating to higher speeds.
I've felt a similar hesitation with my 6.1L Hemi, as you felt with the 5.7L. I think it has more to do with computer programming, than engine performance.
When compared to my Chev 5.7 LS1, I feel the Chrysler V8's aren't as sophisticated. The Chev has very little noise or vibration at idle, while my Chrysler V8's shuddle, vibrate and have a lot of valve noise. This isn't a particularly bad thing for an old hot rodder like me who likes to hear the power under the hood.
My personal preference is for the Hemi (that's what I ordered), but I don't think you can go wrong with the V6.
