Exactly my point.

If you know where to go in the pine barrens you can find some mud & puddles, but no challenging trails like upstate PA.

Are these pictures of PA or the barrens? There are places in the pine barrens that look exactly like what is in these pictures. They are not on any map and you just have to know how to find them.

Yes, all pictures are in the pine barrens. The first set are on state forest land and the second set are (obviously) power line trails. It sounds like you know where they are.
