Perhaps it works differently in a 2015 model. With a 2014, EVIC will tell you "Selected Ride Height Not Permitted" if you try that.

I've never seen that setting. Where can I find it? Maybe the 2012 doesn't have it...

You have to use the up/down buttons to disable yours. Page 451 of the 6th edition of the 2012 owner's manual, you can find it here.

The up/down button method works on a 2014 as well, but I find that approach to be more finicky than just hitting the checkbox in the settings.

No. Sport mode in a 2014 cares not of your preferences, and in fact it goes behind your back and mocks the requests you make to it to your friends. And it uses one of those annoying sing-song voices while pretending to be you, "ooh, I'm Roadkill, I want to change my ride height!", and then it laughs derisively.

What am I doing wrong? I only find 42 pages in the pdf file...

Got it... I am wondering if I raise it to OR2 and then disable the self leveling that will be safe to change my oil?

That's what I do, but I use jack stands as a backup against the system lowering. How hard is it to throw them in place?
