How fast you drive is your decision, but 24+ MPG occurs around 65MPH. Get up around 75MPH, and you'll drop to about 22-21MPG, steeply dropping off above 75MPH.
A 6-7 hour road trip in any modern vehicle is nothing you should ever need to prepare for...unless you're hungry...bring snacks.
Snacks are great, but if you aren't used to that kind of drive, it would be far far safer to stop at least every two hours and get completely out of the vehicle and walk around a few minutes.
