Unless it is a "his and hers" vehicle, not sure two would make sense. If the WK2 (Laredo, Ltd or Overland) meets the daily requirements why not get a true fun car as a second vehicle.
In my opinion, the SRT8 is a good vehicle for those that need the everyday utility of an SUV but want performance as well. If you want the off-roading capability wouldn't a Wrangler be a better fit as a second vehicle.
I am going through this evalution process now. While I have an Overland I prefer the driving behavior of the SRT8. This would be a good compromise of having a performance vehicle that could serve the utility job (towing, dog hauler, winter, etc).
