We did a hitch mount off the back of my brother's truck when we used to tailgate. It had legs as well, so if your hitch is too high or you need to take it off to get in the back end, you should be good to go. I also tailgated out of the back of much smaller vehicles with those little propane grills and wasnt' too upset for portable grilling. I suppose it's all a question of how much of a purist you want to be. I spent more time figuring out how to bring the satellite dish, marine deep cell battery, inverter, receiver and tv than the grill, to be honest.
I think if I didn't go a hitch route if I were looking to get back into tailgating again, I'd probably go with one of those somewhat large coleman propane grills- think they called them the go-griller or something when they were first introduced. If I wanted to go hitch route, I'd probably get a platform fabricated for my smoker.
