ESP for those who dont know how/why.

All the Basic ESP system does is lock up the free spinning tire using the brakes so the power goes to the tire with traction. You can technically do that with any jeep by using the brakes while slipping. The other system has electronic lockers.

Here is a quick little video, Just to show that even though its a very simple form of ESP, and you could technically do it w/o esp and just feather the brake.

Enjoy.

Same as traction control button, just hold it down instead of a quick press (I think you have to be stopped or no faster than a certain low speed). The main reason you want it off is so the computer doesn't drop the engine power on you. And what I mean by that is during the winter I found a nice dirt parking lot full of fresh untouched snow, I tried to do some cookies in it with ESP on and it immediately cut engine power and resulted in no fun, now shut off ESP and bam, spinning around and having fun, real quick till I was on my way again. In the manual there is a section that explains it pretty thoroughly, pretty sure the ABS (pretend lockers) of QT2 are still active regardless of setting. So I would stick with where you have more control of the engine.

For me with QD2. I will only do steep loose rock hills in 4wheel low to use my lockers to get up. ESP only works when not in 4 low. I’ve tried it before when I first got the WK and it makes a lot of noise using the antilock system to go up. Would switch between right and left tires. I got to where I couldn’t go any further and had to back down. When I tried it again with ESP off only the rear left and right front would spin which is basic 4 wheel drive like the old days before electronics. Also had to back down and start over.

Here’s a site that explains how the system works.

Another thread which already talks about what your asking.

A video showing how traction control works for a Commander which is the same as ours. This one had QT2.

Hope some of this helps with understanding the system and how to use it.

More good info
from the owners manual.

Partial Off: Quick press of the TCS/ESP button, when in this mode the TCS portion of ESP, except for the "limited slip" feature has been disabled. This mode is intended to be used if the vehicle is in deep snow, sand or gravel conditions and more wheel spin than ESP would normally allow is required to gain traction.
**Shuts off the feature that causes the engine power to be cut

Full Off: This mode is entered by depressing and holding the TSC/ESP button for 5 seconds when the vehicle is stopped and the engine is running. ESP off message will appear in the EVIC. In this mode ESP and TCS, except for the "limited slip" feature are turned off until the vehicle reaches a speed of 40 mph. At 40 mph it returns to partial off, and once below 35 it will again shut off.

I believe that is only for 2007+ models.

For 2005 model you do not need to hold it. You click it once and it as off as it can be.

On 2005 models ESP was optional (depending on trim level) so you may not have it in your vehicle (mine doesn't). ESP & TCS are 2 different technologies where ESP maintains directional control while driving (i.e. prevents understeer and oversteer by applying brake to inboard/outboard wheel respectively) and TCS (Traction Control System) prevents wheel slip on acceleration. To determine if you have ESP in your '05, just hold down the button for 5 seconds like others have said and if it doesn't say "ESP System Off", you don't have it. Personally, I'd rather not have ESP because it seems as though Jeep hasn't engineered the components reliably (there are several TSB's for flash updates regarding ESP operation as well as reports on other forums of the ESP sensors failing).
