Problem started with all warning lights on dash coming on, no speedo and Jeep wouldn't drive more than a few mph. Disconnected neg terminal for a few mins to reset, now everything works except power seats (which were working prior to disconnect).

Could I have blown a fuse during disconnect or is there some sort of reset that needs to be done? 2007 JGC Laredo

Probably knocked a connector when removing or replacing the battery box cover

Probably the first place to look

There is no battery box cover. Battery sits just above and behind driver side headlight

From what you said, my first suspect would be the power seats causing all those other problems.
Before doing anything else yes check the appropriate fuse for the power seats.
Next i'd check the connectors and cabling under the seats for frayed wires, harness crimping etc.

My bad I assumed the battery was under the passengers seat, I assumed we were talking about a WK2
