I had an intermittent rattle during acceleration on my new 2020. Was able to record the sound using my phone and shared it with the service advisor. They were fairly easily able to find where the exhaust was rubbing against the heat shield after about a day. Collect as much information about when and where you hear it and schedule a service appointment.
I had that same kind of noise and did the same things you did it turned out to be the license plate would smack against the tailgate when you hit a bump, I attached a couple rubber bumpers to the back of the license plate and that was the end of the noise

I removed the license plate and bracket and that was the problem. I placed foam rubber weather stripping behind it and problem gone. Thanks again I appreciate it.
Great news.
The dealership found the problem.
The K bracket in the rear suspensions bolts were not torqued to the correct manufacturers specifications right from the factory.
All suspension bolts were torqued to factory specs and it now rides beautifully.
WORD OF CAUTION
It is a common problem as the dealership found many more 2021 Grand Cherokees with the same problem.
Not a knocking noise, but still a very irritating noise on speed bumps and turning in parking lots on uneven surfaces. Looked at everything. Then discovered when I had my cargo cover extended, it was making the noise. Now just leave it un-extended unless there are items in the back that I don't want visible.
